Visiting Toronto often is one of my favorite perks of my job(s). At this point, I have a favorite neighborhood, favorite restaurants, favorite streets, and even a favorite apartment I always try to rent. It’s walking distance from Rhum Corner, a delicious Haitian inspired bar and restaurant on Dundas, in the hipster-ish (gosh we need a new word for that) area that borders Trinity-Belwoods park. The food is lovely, improved proportionally by how much homemade hot sauce you douse on it, and the cocktails are dangerous. Very dangerous. But that’s why I rent an apartment that’s walking distance away!
My favorite cocktail they serve is a Jungle Bird. Imagine a perfectly balanced adult slushy. Not too sweet and way too easy to sip, I love it so much. Here’s my version when I’m missing my favorite city, street, and bar to the north.
1 1/2 ounces dark rum
1/2 ounces Campari
1/2 ounces fresh lime juice
1 1/2 ounces pineapple juice
This is typically served over crushed ice, but I prefer it as a slushy.
Put a few handfuls of ice into a blender, add the ingredients on top, and blend until very smooth. Serve with a pineapple leave for garnish.
