FROZEN GREYHOUNDS

This weekend, I whipped up these greyhounds on a whim and they were oh so simple to make. Even as a mocktail, this drink is business. It comes from the grapefruit simple syrup, made with the spent rinds, which has a lovely bitter bite. The best part? It’s only three ingredients!

INGREDIENTS:

For one cocktail

4 ounces fresh squeezed grapefruit juice (about 2 grapefruits)

1 1/2 ounces vodka

1 ounce grapefruit simple syrup

2 handfuls Ice

DIRECTIONS:

Combine everything in a blender and blend until very smooth. Serve with a straw!

INGREDIENTS (SIMPLE SYRUP):

Grapefruit rinds (as many as you have on hand)

1/2 cup sugar

1/2 cup water

DIRECTIONS:

Combine all of the ingredients in a pot over medium heat. Cook until the sugar has fully dissolved. Turn off the heat, and let the skins sit in the syrup for at least 30 minutes. Cool completely before using.
