One of my favorite moments from my trip to Mexico was sipping on this refreshing drink after walking through Puebla. I didn’t know what “nuez” meant, but was pleasantly surprised to find little pieces of walnut floating in my cup. The walnuts add a delicious texture and flavor to this slight and sweet coconut drink.
INGREDIENTS
2 cups of milk
4 cups water
1 1/2 cup sweetened coconut flakes
1/2 cup finely chopped walnuts, divided
2 tablespoons agave nectar
DIRECTIONS
In a small saucepan, simmer the milk, water, coconut, and half of the walnuts over low heat for about 5 minutes or until very warm. Be sure to stir constantly, otherwise the coconut so that the coconut doesn’t settle on the bottom and burn. Remove from heat and let it cool to room temperature.
In a blender, puree the cooled mixture until smooth. Strain into a 2-quart pitcher, add the remaining walnuts, and stir in the agave nectar. Enjoy!
