If you’ve driven around LA, you’ve seen those rainbow beach umbrellas perched on neighborhood corners. It looks like a fruit stand, but if you go behind the cart, it’s much more. Lime, salt, chili, all combined with the fresh fruit of your choice in a plastic bag. On a hot day, there is nothing better. I’ve careened across a few rows of traffic to get to one in a particular weak moment. Cocos frescos (which technically means fresh coconuts, but it’s more of an umbrella term here) are classic Mexican street food at it’s finest. Simple, fresh, and exactly what you crave in that moment. This is also insanely easy to make. I feel like a bit of a fraud for even posting it as a “recipe” because…you know, it’s lime, chili, and salt on fruit. But considering it’s one of my favorite snacks, I figured it was worth sharing. 1 mango, peeled and cubed
1/2 pineapple, peeled and cubed
1/4 small watermelon, peeled and cubed
lime juice, to taste
kosher or sea salt, to taste
ground chili (tajin is best!), to taste
