Even though guacamole is a summer staple, avocados are in their peak season through fall. And what better way to give cold weather the boot, than gorging yourself on grilled, bright, fresh flavors?
And if you don’t feel like heating up the grill, mixing the avocado with the mango salsa makes a killer guacamole.
INGREDIENTS
For 6
1 mango, chopped
1 jalapeño, finely chopped
1/2 red onion, finely chopped
1 lime, juiced
salt and pepper to taste
3 avocados
1 tablespoon olive oil
DIRECTIONS
Heat a grill up to high heat. Mix together the mango, jalapeño, red onion, lime, and season to taste with salt and pepper. Set aside. Halve the avocados, remove the seed, and rub lightly with oil. Place the avocado face down on the grill and grill for 2 to 3 minutes, or until grill marks are present. Set aside on a plate, season with a little salt and pepper, and top the holes of the avocados with mango salsa. Enjoy!
