When plain old ketchup won’t do the trick, this simple and delicious tomato sauce is the perfect accompaniment to fried eggs and potatoes. The butter brings a little richness to an otherwise bright and tangy sauce.
For 1 cup of sauce
2 cups tomatoes, chopped
2 tablespoons fresh basil, chopped
2 tablespoons unsalted butter
1 clove garlic, minced
kosher salt and freshly ground black pepper
2 teaspoons balsamic vinegar
Combine all ingredients in a small pot and bring to a simmer for 10 minutes. Salt and pepper to taste, finish with balsamic.
