Smokey mezcal and chipotle are balanced out by rum and pineapple honeyed sweetness. This is sort of like a “south of the border” old fashioned, with some island vibes thrown in.

INGREDIENTS

2 chunks pineapple

angostura bitters

1 big pinch chipotle powder

2 ounces mezcal

1 ounce rum

1 teaspoon maraschino

DIRECTIONS

Muddle the pineapple, bitters, and chipotle in the bottom of a cocktail shaker. Add the mezcal, rum, maraschino, and a few ice cubes. Stir vigorously, then pour into a tumbler.
