Salad fatigue is a thing, people. I try to eat leafy greens often, but coming up with new ideas for serving them can be a challenge. Then it occurred to me that every salad I whip together has more or less the same five elements (greens, protein, nuts, veggies, dressing). So here’s a helpful little grid with some of my favorite ingredients to mix it up. Let me know which combination is your favorite!
SALADS
GREENS
kale, spinach, romaine
NUTS
sunflower seeds, almonds, pepitas
PROTEIN
chickpeas, quinoa, black beans
PRODUCE
cucumber, tomatoes, avocado
DRESSINGS
TAHINI DRESSING
2 tablespoons tahini
1 tablespoon lime
2 tablespoons olive oil
1/2 garlic clove, minced
salt and pepper to taste
DIRECTIONS
Combine everything together in a lidded container, and shake until emulsified.
AVOCADO DRESSING
1/4 avocado
1 tablespoon lemon juice
2 tablespoon lime juice
3 tablespoons olive oil
salt and pepper to taste
DIRECTIONS
Combine everything together in a blender, adding more citrus or olive oil to get desired texture. Refrigerate in a sealed container until using.
SWEET AND SOUR DRESSING
1 tablespoon apple cider vinegar
1 tablespoon honey
1 tablespoon whole grain mustard
3 tablespoons olive oil
salt and pepper to taste
DIRECTIONS
Combine everything together in a lidded container, and shake until emulsified.
