SMOKED SALMON PLATTER

This isn’t a recipe, but it is a good idea.  You can lay everything out on a platter hours before mealtime, hold it in the fridge, and look like a hero when breakfast rolls around.  The combination of rich smoked salmon with briny capers, peppery red onion, and some tangy freshly herbed cream cheese may not be original, but it sure is delicious.

INGREDIENTS

For 3-4

1 pound smoked salmon, thinly sliced

1 large tomato, sliced 1/4 inch thick

3-4 large capers

3-4 tablespoons whole grain mustard

1/2 red onion, sliced thinly

3-4 bagels, halved and toasted

INGREDIENTS (HERBED CREAM CHEESE)

8 ounces plain cream cheese, softened

1 tablespoon chives, finely chopped

1 tablespoon dill, finely chopped

DIRECTIONS

Lay everything out on a large platter in whatever configuration you like.

To make the herbed cream cheese, simply mix all three ingredients together with a spatula until well incorporated and creamy.
