SPICY MUSTARD GLAZED BACON

This is straight up gilding the lily.  Bacon is already smokey, savory, and sweet, so messing with it isn’t really necessary, but boy is it fun! The spicy mustard gives this bacon a sophisticated kick, making it perfect for a brunch where you’re making a little extra effort. Enjoy!

INGREDIENTS

For 6

12 slices thick cut bacon

1/4 cup maple syrup

1 teaspoon dijon mustard

1/2 teaspoon Coleman’s mustard powder

1 pinch cayenne pepper

DIRECTIONS

In a large sauté pan or skillet over medium high heat, cook the bacon in batches until almost, but not fully cooked, about 2 minutes a side. Combine the maple syrup, dijon, Coleman’s, and cayenne in a small bowl.  Brush one side of the bacon with the maple mixture and flip in the pan, glazed side down. Cook for two minutes, glaze the other side, and flip, cooking for 2 minutes more.  Enjoy!
