toasted slice of eureka!® Organic Bread with smashed avocado and hardboiled eggs on top // The Kitchy Kitchen

Toast is having a bit of a moment. Not too long ago, toast was considered an afterthought. Something to do with past its prime bread, something to sop up a dish that was more flavorful. But now, we’re seeing entire cookbooks dedicated to bread and its toppings, restaurants with a toast-centric universe, some people are even saying it’s the best thing since sliced bread. (Sorry, couldn’t help myself!).

So when I partnered with eureka!® Organic Bread, I adopted their “Don’t be Bland” mindset.  You don’t have to sacrifice taste in order to eat better.  I immediately gravitated to toast as the perfect recipe to highlight this motto.

There are a variety of eureka!® breads available, and all are certified vegan, organic, made without artificial colors and preservatives, and free of corn syrup – so you know it’s just the good stuff. To show the versatility of this rich and flavorful bread, I decided to play with both sweet and savory options: creamy mascarpone with berries for one, and a twist on avocado toast for the other. Enjoy!

  • That avocado and egg toast looks delicious! I recently found sunflower sprouts at my local health foods store after looking EVERYWHERE so will definitely be using them for all kinds of avocado toast and sandwiches this summer!
