Toast is having a bit of a moment. Not too long ago, toast was considered an afterthought. Something to do with past its prime bread, something to sop up a dish that was more flavorful. But now, we’re seeing entire cookbooks dedicated to bread and its toppings, restaurants with a toast-centric universe, some people are even saying it’s the best thing since sliced bread. (Sorry, couldn’t help myself!).

To show the versatility of this rich and flavorful bread, I decided to play with both sweet and savory options: creamy mascarpone with berries for one, and a twist on avocado toast for the other. SWEET TOAST

1 slice eureka!® Organic Bread, toasted (I used Seeds the Day)

3 tablespoons mascarpone

1 handful blackberries, sliced in half

2 apricots, quartered

1 teaspoon cinnamon sugar

DIRECTIONS

Spread mascarpone on the toast, top with fruit, and finish with cinnamon sugar.

SAVORY TOAST

1 slice eureka!® Organic Bread, toasted (I used Seeds the Day)

1/2 small avocado, smashed

1 pinch chili flakes

1 squeeze lemon juice

1 hard boiled egg, quartered

handful sprouts

salt and pepper to taste

DIRECTIONS

Spread the avocado onto the toast, and press with a fork. Garnish with chili flake and a squeeze of lemon. Top with egg, sprouts, and salt and pepper.

  • That avocado and egg toast looks delicious! I recently found sunflower sprouts at my local health foods store after looking EVERYWHERE so will definitely be using them for all kinds of avocado toast and sandwiches this summer!
